Lobster 2 Ways: #1 - Ginger Scallion [姜葱炒龙虾]
Lobster is expensive. So, naturally, there is a debate about what dish should be made with it. One of the classic ways would be the ginger-scallion stir fry method. What I love about this is that it is so easy compared to other ways of cooking, and it brings out the natural sweetness of the lobster.

Ingredients
Lobster tails, 4
Scallion, 5 stalks
Ginger, 1 chunk (size of half a fist)
Garlic, 2 cloves
Corn starch, 3 tbsps.
Cooking wine or white wine, 1 tbsp.
Salt
Water, ½ cup or more
Steps
1. Cut lobster tails into 1.5-inch chunks with kitchen scissors.
2. Roll the lobster chunks in 3 tbsps. of corn starch and ½ tsp of salt until all surface areas are covered.
3. Heat 2 tbsps. of olive oil in a pan and add ginger, scallion (save 1 stalk worth of scallion for later), and garlic. Stir for 3 minutes until the aroma comes out.
4. Add the lobster chunks and stir on high heat until the shells turn red.
5. Then, add 1 tbsp. of cooking wine, ½ cup of water, and salt to taste (½ tsp+). Turn heat to medium until cooked through, for about another 5 minutes.
6.Add in the remaining scallion, stir slightly for 1 minute, and serve.
