Tomato Fried Egg with Noodles [西红柿鸡蛋面]
In Chinese cooking, tomato fried egg is often considered the first “complete meal” that people learn to cook. A “complete meal” consists of protein, vitamins, and carbs all in one dish.
I personally like this dish because I am always looking for a reason to have fluffy scrambled eggs.

Ingredients
2 large tomatoes, cut into 2 inch chunks
3 eggs
3 tbsps. + 1 tsp. of olive oil
5 mini nests of thin pasta (or other noodles)
Salt, to taste
Steps
1. Bring a pot of water to boil. In the meantime, whisk the eggs and cut the tomatoes. Add 1/4 tsp of salt into the eggs.
2. Place pasta into the water and cook according to instructions, usually for about 8 minutes. Season the water generously with salt.
3. Heat 3 tbsps. of olive oil into a skillet until sizzling. Be patient.
4. Whisk eggs into the skillet. Once a layer forms (picture on the left below), start stirring the eggs. Set aside when ready.
5. Take out noodle and put it through a sieve. Place in a bowl.
6. Add the remaining olive oil in the same pan used for the eggs. Add tomatoes, and stir until the tomato chunks can be fairly easily broken with a spatula.
7. Add the egg back in and stir for an additional 1-2 minutes to blend the flavors. Add salt to taste. Add some water if necessary to create more sauce for the noodles.
8. Transfer the tomato fried eggs on top of the noodles. Optionally, add dried chili flakes and/or finely minced garlic for additional flavor. Serve.
