Duck Wings in Lu Marinade [卤鸭翅]

The traditional “lu” marinade is complex. It involves stocks from multiple meats and dozens of spices, which are all simmered to made the marinade. Today, we will make a simple home version of it. Many ingredients can be simmered in lu, so this dish can easily be made for vegetarians and vegans.

Ingredients

Duck Wings, 1.5 lbs.

Can substitute with lotus root for vegan version.

Old Lu (Lu Marinade from previous use), 2 cups.

Can sub with equal amount of Chicken/Beef/Vegetable Stock + 3 tbsps. of soy sauce + 2 tbsps. of hoisin sauce.

Spice Mix

  • Soy sauce, 2 tbsps.

  • Hoisin sauce, 2 tbsps.

  • Ginger, 5 slices

  • Scallion, 1 stalk

  • Cooking wine, 3 tbsps.

  • Star anise, 3 pieces

  • Bay Leaf, 2 pieces

  • Dried chili pepper, 2 peppers

  • Sichuan chili pepper oil, 1 tsp.


1. Bring a pot of water and duck wings to boil. Strain the water and place duck wings aside.

2. Add duck wings remaining ingredients into a large pot. Cover and cook in regular pot on medium heat for 2-3 hours, or place in pressure cooker for a shortened cook time. If lotus root is used instead, then the cook time can be shorter, around 1-1.5 hours.
